Recipes

  • After having turned some soft, wrinkly apples into applesauce last week, I tried my hand in making applesauce cake– which turns out is SPECTACULAR. Like better than banana bread or anything else I’ve baked as of late kind of spectacular… like I ate the whole cake by myself over the weekend kind of spectacular… like its impossible to just have one slice kind of spectacular. I skipped the caramel glaze merely because I was out of butter at the time and once I cut into the cake (mostly out of impatience), I decided that it was oh so very good by itself. Butt, I think next time I will definitely make and add the glaze because I have a feeling.. it will be most grand 🙂 And isn’t that what we all live for? Apple sauce cake with caramel glaze? Yes.
  • I’ve been craving good buttery flaky biscuits for awhile now and tried whipping up a batch the other week to go with my sausage gravy I had made, thinking.. how hard could it be? Turns out biscuits are tricky motherfuckers. If you handle the dough too much they wont rise (so basically, over stirring/mixing will kill a biscuit). Using a recipe that is high in baking powder will also make a biscuit weirdly salty-bitter. Nonetheless, after pretty much throwing out my first attempt, I tried out Alton Brown’s recipe and am happy to report back that my second batch was a success! Note: I doubled the amount of butter and shortening.. cuz fail-proof biscuits.
  • Tried out this recipe for Mustard Broccoli and loved the new (to me) twist. It was easy to throw together and the flavor was great- though I think I will use less sugar next time.

What I’ve been watching

  • I was feeling in the Christmas mood and stumbled across Netflix’s special A Very Murry Christmas and would recommend it to anyone who is looking for a little extra cheer this season. Bill Murry basically makes his rounds visiting and duet-ing with (who knew Bill could sing? He can’t really.) random artists like, Jenny Lewis and Chris Rock. Without a doubt Miley Cyrus steals the show with her cover of Silent Night. She kills it.
  • I randomly came across the documentary The Tiger and The monk on Netflix and found it a bit.. puzzling? Something just didn’t feel right about how the tigers were taken care of and then exploited as a tourist act. Nonetheless, the documentary puts a light on the monks’ “charitable” acts, though I have since come across many articles online questioning the animals’ treatment with many visitors/tourists of Tiger Temple claiming that the tigers seemed sedated the entire time.

What I’ve been listening to

  • I mentioned before that Dear Sugar Radio is the bomb.com but I wanted to mention that their infidelity episodes (there are 3 parts) are particularly intriguing. In part 1 they read and answer letters from people who have been cheated on (the betrayed) and in part 2 they read and answer letters from cheaters (the betrayers) themselves. Oh the perspective! In part 3, the sugars interview Esther Perel and it is absolutely fascinating. Give em a listen.

What I’ve been watching

Hulu has been kicking ass lately with their recommendations. I’ve been really enjoying a lot of FXX shows such as Married and my personal fave, You’re the Worst. Both shows take a dark yet refreshing view point on relationships AND they’re both brilliantly funny. Watch em on Hulu or stream on Amazon!

If you’re a Netflix user, I highly recommend Master of None– Aziz Ansari’s new show. It hits on some pretty real generational/ cultural gaps (in a humorous way) today’s younger generation *may* deal with that aren’t necessarily openly talked about..until now. And Aziz pretty much plays himself on the show, so win/win.

What I’ve been listening to

In search of creative inspiration, I stumbled across Elizabeth Gilbert’s podcast series Magic Lessons. I listened to the first episode and honestly, it didn’t really tickle my fancy. But I went on to listen to the second podcast because- Cheryl Strayed. The two things I got out of the second podcast is 1) Elizabeth Gilbert isn’t really my cup o’ tea (anymore) aka her podcast is lame a.f. 2) WHAT!? Cheryl Strayed has her own podcast?! AND its a podcast version of Dear Sugar?! *GOLD* I LOVE Cheryl Strayed. Ever since I read Tiny Beautiful Things (I highly recommend this read) I’ve well..kinda wanted to be a writer/ therapist/ or something in between that wouldn’t require me to go back to school..aka a badass motherfuckin’ advice columnist just like Sugar. Anyways, the Sugar(s) podcast totally kicks ass. (Plus, their intro song is Nina Simone’s I Want a Little Sugar in My Bowl) It’s also refreshing to listen to something beyond NPR. Listen. Now.

  • I had some old, semi-wrinkly apples lying around so I finally tried my hand in making some apple sauce– which turns out is simply boiling apples with some sugar and water. E.Z.
  • I was in search of a new way of preparing broccoli and stumbled across this recipe for stir-fried asian style broc recipe and it is so fucking good, it is definitely being added to my weekly rotation. Never order chicken and broc in brown sauce at a restaurant again kinda good, I’m telling you!
  • With that delish broc, I had steamed rice and this korean style pan fried tofu with spicy sauce. It definitely hit the spot. It’s pretty much a basic “side dish” for any Korean meal, but if you’ve never tried it I highly recommend giving it a whirl. It may just rock yo world.

  • Also- while we’re on the Orangette note, I made this chickpea dish, and yogurt pasta sauce  for dinner last night and while I found the chickpea dish a bit bland, the yogurt pasta sauce was mind blowingly AMAZING! Make it. NOW.

  • OMG, best thing I’ve baked in awhile. I had all the ingredients for this greek yogurt banana bread and it turned out KILLER. I added an extra banana cuz I hate when banana breads aren’t banana-y enough, ya know? and chopped up a bunch of trader joe pralines and thew em on top to create a really yummy candy, nutty crust. It was perfect. Saving this one.
  • I’ve been trying to eat my greens and this recipe has helped me kale. (That’s right. Get your kale on.)
  • I’ve been on a peanut butter kick and these cookies did not disappoint.

  • I had some ripe bananas and a can of pumpkin so naturally I went searching for a pumpkin banana bread. This one turned out moist and tasty.
  • I made this eggplant rollatini last night with some modifications (I sauteed some chorizo, onion, and spinach into the marinara, baked rounds of zucchini and squash to place between the eggplant rolls, and used an Italian mix of cheese instead of only using parm and mozzarella) and it turned out most eggzellent. Highly recommend!
  • I want to try out these Zucchini Fries..me wantz!
  • I read good things about Hainaese Chicken Rice and want to try out this recipe sometime!
  • Tried out this beef n broc stir fry last night (used filet and added shrooms, bak choy, and green onions) and it was delish! Highly recommend.
  • I had a hankering for something sweet the other day so I whipped up a batch of these peanut butter cookies. They were easy to make and tasted great, but next time I think I’ll try out a flourless recipe to see if I can get a more chewly and moist cookie.

  • I made this hot and spicy tofu and beef for dinner this week and it turned out pretty tasty. I used a whole package of tofu (which was a bit over 300g) and used fresh green chili peppers instead of the dried peppers. It was a wee bit tart (due to the rice vinegar) for my taste, but still great.
  • This salmon with garlic and ginger looks easy and yummy.
  • I tried out this chocolate chip (walnut) cookies tonight.. and they were surprisingly terrible. They didn’t melt down like the description said they would. They were also completely raw in the middle and had to go back into the oven after a cooling..fail. I have a feeling it had more to do with the recipe/ proportions than what I may have done as the baker- seeming that other people had the same issues come up after giving this recipe a go (see comments on post).

He misplaced his hard copy and found that this was the closest to what he had intended for us to read. In my teacher’s own words, “Most important in all this is the read the actual names of the feelings (all are different kinds of sad, mad, glad or scared.  The purpose is to know that there is a range of possible feelings within one subheading, so you can develop some degree of subtlety of feeling in your practice and Life.”

Thing Thangs

Recipes:

  • I made these brownies a couple of weeks ago and honestly I chose this recipe because all I had as a chocolate source was unsweetened chocolate powder. It turned out really dense and rich. Can’t say that they were my favorite..
  • Tried out this pomi spaghetti sauce for dinner this week- with a few slight alternations. I added some dried oregano, basil, ground beef, and a touch of sugar to balance out the acidity. After about an hour of simmering it was.. mediocre. The sauce really lacked a depth of flavor.. maybe some wine would’ve helped?
  • I’ve had a serious hankering for some doughnuts lately and would love to try these baked yeast donuts some time soon! Or maybe these baked cake donuts? Cake donuts are my fave 🙂

Durham Finds:

  • Finally got my ass over to Loaf this morning (though I will admit I only trotted over there after finding Scratch closed one morning). I picked up a chocolate croissant (highly recommended on yelp), an alfajore (dulce de leche sandwiched between two small shortbread cookies then rolled in dried coconut flakes- the lady ahead of me picked up a box full of them, so obvi I had to get one to see what it was all about), and a coffee. The cookie was rich and tasty, but maybe I should’ve saved it for later in the day? Not quite an 8 am treat. Coffee was surprisingly great (maybe better than Scratch’s?) though it should be noted that they don’t do specialty coffee drinks.. which is fine by me. The chocolate croissant..I am saving for later when I need an upper 😉 Nonetheless, I may be a convert.

Movies on Netflix I want to watch:

  • My therapist told me about this movie, An Honest Liar, saying that the film made him question what was “real”/ his own faith a bit. The movie description reads, “World-renowned magician and escape artist James “the Amazing” Randi dedicates his life to exposing fake psychics and others who claim paranormal powers.”
  • Also came across this B.B.King Documentary that looked intriguing- The Life of Riley.

Recipes to try:

  • I’ve never really been a soba noodle kinda gal, but I love Orangette and the sauce sounds divine. And since we’re on the subject of Brandon‘s recipes on Molly’s blog- his chickpea salad also looks really simple and tasty! Orangette is seriously making my heart melt today. (P.S. If you don’t stalk her Instagram for photo’s of June..you are missing out, buddy)

Recipe’s tried out this week:

  • After having a *moment* with Orangette’s blog, I searched her recipes for an evening treat that allowed me to use up some blueberries I had in the fridge. These oat scones were easy to throw together and did not let me down. Also, I have a thing for Caesar salads and her dressing (the second one, mayo based) was truly wonderful- maybe even one of the best homemade dressing recipes I’ve stumbled across. Served with Romaine lettuce, (store bought) roasted chicken, and parm- it was really really fucking good.

Books to read:

If I had a million dollars:

  • I usually use my Bialetti stove top espresso maker in the mornings and just add a generous amount of milk (or half and half) to my cup… but this milk frother could be a game changer.
  • If I was *fucking loaded* which I am currently the opposite of- I would buy this velvet couch in a fucking heartbeat. The royal blue is so luxurious, I. DIE. It just screams, “I am queen (of my life).”
  • This world map mural is amazballs.

  • Best movies of 2015- last weekend, I went to see Inside Out with my mom and lil sis. It wasn’t my FAVORITE Pixar movie, though it has high ratings on rotten tomatoes  (I liked the last Pixar movie I saw- Big Hero 6 a lot better, better/more mature(?) plot line in my opinion) but it was still creative to say the least.
  • A short and sweet (and pretty accurate) personality test. Turns out I’m a ISFP “The Adventurer.”
  • Happiness requires struggle. “Who you are is defined by the values you are willing to struggle for.”
  • I tried out this buttermilk cobbler recipe last night and while it was quick and easy to throw together (I used fresh peaches, blue berries, and raspberries) it didn’t quite satisfy my cobbler craving. It turned out to be more of a vanilla cake with fruit.. where I was looking for more of a crusty pie-like cobbler. Still searching for the BEST cobbler recipe!
  • I still had some buttermilk left (I usually have buttermilk on hand so I can make these AMAZING oatmeal pancakes which I often reference), so I also made some buttermilk banana bread– and for some reason, my bread turned out a bit denser than I had hoped.
  • So I bought this tapestry to hang over my bed in hopes of upping my *~good vibes~* at home. Urban Outfitters has a few cool ones I was trying to decide between, but ultimately I knew I wanted a mountain scene and all the positive reviews encouraged me to just go for it..so go for it, I did! Will report back on whether or not I decided to keep it/ love or hate it.

A Southern Meal

I made some Jalapeno Cheddar Cornbread and collard greens for dinner the other night and they both turned out great, cuz you know an asian gal like me needs her comfort food every now and then.

Some pointers: the cornbread was very moist and tasty. I liked the recipe cuz it doesn’t ask for flour (I had previously tried/used this recipe- which is also very good, but not really cornbread). I would maybe cut back on the butter and make sure you use pickled jalapenos (not fresh), because I used fresh and the flavor/spice didn’t quite come through.

The collard greens are great too. Some times I like to just put em over a bed of rice and call it a day.
